Easy to do although there are a few steps! Also, this recipe can be made using low-fat or fat free products!

*three boneless, skinless chicken breasts
*10" tortillas
*salsa (whichever is your favorite!)
*Philadelphia cream cheese (low fat or fat free)
*cheddar cheese OR Velveeta low fat or fat free cheese

1) Cut chicken breasts into cubes and cook in a small amount of olive oil or butter on the stove. (add onions if you like!)
2) In a saucepan cut cream cheese into cubes and melt over low heat, add salsa to get a smooth mixture (you may add as much or as little salsa as desired)
3) after cream cheese and salsa are well blended and chicken is cooked thoroughly, add the chicken to the sauce mixture and stir.
4) scoop chicken mixture into the center (in a line) of the tortillas and roll, then place them side by side in a baking pan.
5) pour cheddar or velveeta cheese (melt the velveeta in the microwave first) over the tops of the rolls and then put in the oven on 350 for about 10 minutes or until the cheese has melted/spread.
6) remove from oven and pour remaining salsa on the tops of the enchiladas!
7) enjoy!

(mexican or spanish style rice goes very well with this as does sour cream for dipping!)
